Christmas Break

This Christmas break I am going to be back home with my family, more like i'll be working my butt off but oh well. 

Anyway...

This Christmas break, and hopefully Thanksgiving break is being devoted to me being crafty!  I have a lot of ideas and I'm going to need to unwind after the semester that I've had.  I don't recommend Psychological Statistics... it's the worst class I have ever taken.

I think i'm going to do a count down to Christmas of sorts.  Here are a few of the projects that I plan on doing.

My Gift to Myself

Today my roommates and I stopped by Down East while at the mall.  I like to pop my head in every now and then just to see what they have on clearance.  Today I ended up perchasing my Christmas dress!  I plan on wearing it with a black cardigan of sorts and pearls. 


This dress was originally $49.99 and I got it for $10.00!  Deal of a lifetime, I couldn't pass it up. 

I need to take up the hemline, because i'm super el shorto but hey for ten buck I really don't care.

I would rather get a camera than rock climbing gear.  I can always wait to get that for my birthday if I still want it. 


I've recently had the desire to teach myself how to play the acoustic guitar, I have a lack of music in my life and I think it would be something fun to do.  Mom, I know you've been wanting Stinky to pick up the guitar again.  Maybe this could be a family gift?

Ratsketball

I'm in this awesome psychology class, Behavior Analysis and we're working on our rat lab projects.  Yes I know the sound of working with rats makes most people sick, but don't knock it till you try it.  My group got assigned to work with our rat Frederick just over two weeks ago.  We decided that we were going to teach our rat how to play basketball.  Coolio, huh?
I bet you didn't know that rats could learn how to play basketball.
  What's even cooler is that our rat only plays basketball when the Space Jam theme song is playing!



Doesn't that song just evoke positive emotions and pump you up?!


I believe my group will be getting extra credit!

Retail Therapy

8:10 yesterday morning I get a call, it's Skyler, he's calling to get my address before he has to leave for the MTC later that day.  What a sweet surprise it was to hear his voice, bitter sweet.  He's been one of my best friends for years and yesterday I had to say my last goodbye.  Goodness I'm going to miss the boy!


Well I think that completely put me in a funk for the rest of the day.  
Later that night I decided I was going to make the best of the time I had left in the day, as you know I made delicious enchiladas and was able to see a good friend from Salt Lake City.  Being an awesome person (i'm so humble) I decided to take dinner to the guy I've gone on a couple dates with.  When I got to his house he was watching Saving Private Ryan in remembrance of all the veterans that have died for the freedoms that we have.  I sat down to watch the last forty minutes.  I have never been so disturbed by anything in my entire life!  I couldn't possibly understand why someone would willingly watch the horrors of war.
Needless to say it put my in a huge funk.  I completely freaked out about the character of the guy I've been spending time with.  I understand that not everyone has the same standards that I have but I realized that there are some huge differences between him and I.  As I walked into my apartment my roommates asked me how things went and I burst into tears and rushed to my bedroom.  How could I possibly date a person who hunts/shoots guns, plays violent video games and watches horrific war movies?  I made a rash decision to completely end things between us, but now as I think about it I realize that it would be stupid to end things without voicing what the problem is.  
I'm right in thinking that... right?

Well today I needed some major retail therapy!  Plus I needed some new jeans.  Loosing almost ten pounds means that your jeans no longer fit your nonexistent butt.  I got some way cutie super skinny jeans that I am currently wearing tucked into my black suede military style boots. I know that shopping shouldn't be used as a way to make you feel better, but sometimes I just can't help it.  I've been told that when you look good you feel good.  I wan't feeling good or looking good so I went shopping.  I didn't spend all that much and only got two things that weren't needed, a flouncy striped shirt and EL Fudge cookies.  

I love EL Fudge cookies, they make me happy!

Delightful Dinner

The day started off like crap, but I took some time for myself and now it's all better!

I had a friend come up from Salt Lake so I decided to try a new recipe for dinner.  I made him and my roommates Honey, Lime and Chicken Enchiladas, and boy were they fantastic!  I got the recipe from one of my favorite recipe blogs, The Girl Who Ate Everything.

Here is the recipe as well as pictures from her blog:


4-5 T. honey

5 T. lime juice
1 T. chili powder 
1/2 teaspoon garlic powder
1 pound chicken, cooked and shredded 
8-10 flour tortillas 
1 pound monterey jack cheese, shredded
16 ounces green enchilada sauce
1/2 cup heavy cream 

Mix the honey, lime juice, chili powder and garlic together and toss with the shredded chicken. Let it marinate for at least 1/2 hour. Pour about 1/2 cup enchilada sauce on the bottom of a 9X13 baking pan. Fill flour tortillas with chicken and shredded cheese (and a little enchilada sauce), saving about 1 cup of cheese to sprinkle on top of enchiladas. Mix the remaining enchilada sauce with the cream and add a couple more dashes of chili powder. Pour sauce on top of the enchiladas and sprinkle with cheese (a lot of cheese!).  Bake at 350 degrees for 30 minutes until brown and crispy on top. 

Mine wasn't crispy so I turned on the broiler for a couple minutes. 

Then, for dessert we're having:

Limeade Pie!


6 oz. can of frozen limeade concentrate
1 can of Eagle Brand Condensed milk
8-10 oz. thawed Cool Whip
couple drops green food coloring (however green you want it)
premade graham cracker crust
Thaw out the limeade so that it is runny. Mix it thoroughly with the condensed milk. Stir in food coloring and fold in whipcream. Pour into the graham cracker crust and let set up in the freezer.

I took my leftover heavy cream from the enchiladas and whipped it up with some powdered sugar and lime juice to put on top. 

I'm sick of waiting, I wish it would set up faster!

Just Not My Day!

I'm in a hard core bad mood today!  

My feet were freezing cold all night long so I didn't sleep well.

My best friend left on his mission today.
I hate my Psychological Statistics class.
I have to locate and watch the movie Capote (rated R) 
for my JCOM class.
I am sick and tired of going to my rat lab everyday!
I haven't been diligent in being spiritual.
I suck at the whole dating issue.
I want to go home!
I had yet another quiz in my Behavior Analysis class today. 
I miss my family and Jesika.
I desperately want to talk with my friends on missions. 


Reasons why I should be happy!

I'm listening to some of the Glee soundtracks.
I'm done with classes for the day.
I just ate lunch. 
I learned how to drive a stick shift last night. 
We had a RS meeting this week!
I was able to talk with Jesika on the phone today.
Skyler called me this morning before leaving to the MTC.
Thanksgiving is coming soon!
I for sure have a job over Christmas break. 
I my family loves me.
I have great friends in my ward!

Well, I guess the day isn't so horrible.  I think I just need some Kelsey time.  I will probably go buy some beads and do crafts later today.

Blah.

It's Monday, it's raining, and I was informed that my first class wasn't going to be mandatory this morning.  Needless to say I didn't end up going to Dress and Humanities.  Which is totally okay because I have a solid A and we were going to be going over old projects that needed to be fixed. 

Goodness, goodness, the weekend was an adventure!  I learned how to shoot a gun, something that I don't think i'll be doing much of in the near future.  While on my little shooting adventure I got an awesome sweet bruise (that I can't let my date find out about).  I'm so going to post a picture of the nastiness!   

Yesterday all of my roommates were gone, either visiting family or singing in the CES broadcast so I had the apartment all to my self! Woot, woot! When I got home from stake conference I put in a movie and took a much needed nap on the couch; it was heaven!  I basically slept all Sunday long.  I invited my date to go to the broadcast with me... Of course he came.  Once it was over we played games on my laptop, and then the Hesper (my awesome RS President and partner in crime) came over because I had told her that I was alone for the night.  When she came over I think she was a little shocked first to see that there was I guy over, one I hadn't told her about and second, she was his suit coat that had his old missionary tag attached to the inner pocket.  Oh my goodness she gave me the worst look!  It was a look of 'Why is there a missionary in your apartment?!' I quickly told her that he was no longer a missionary, and that i'm not a harlot. 

She stayed and talked until it was time to go to ward prayer.  Being an idiot I decided to invite him to come with us... Of course he came.  The walk over to the church was fine, UNTIL I notice that the bishop is greeting everyone in the foyer.  How stupid could I be?! I quickly walk in and shake the bishops hand hoping that he won't notice that I brought a boy to ward prayer, but the bishop being wise and sneaky stops him to shake his hand and tells him that if he's here with me that he is the luckiest guy in the building, upon which the ward clerk agrees.  I quickly drag the poor boy out of the awkward situation and we make a b-line to the back of the room.  

Luckily there weren't very many people there last night, but I still feel like a COMPLETE IDIOT!

Failure!

Dearest Everyone,
I've been a lazy bum ever since I got sick and I apologize for the lack of posts.  Actually I had a great post about my Halloween weekend but it somehow got deleted and then I just got ticked and decided that I hated blogging.  It was a rash decision and I've forgiven blogger for being stupid. 

Well the week is over and I must say that it was wonderful, although I completely failed my psych 
stats test (sad face), I guess you can't win them all.  The day did end up turning around; there was ice cream, swings and a boy involved.  Crappy day made so much better!

We have an action packed date later today.  He's picking me up during halftime of the UofU vs. TCU game and we're going to his apartment to watch the last half, then we're going shooting.  After that adventure were going back to his apartment to make dinner and watch a movie.  What sort of guy plans a date like that?  I think this date is more planned out than my high school dances were.  It's definitely unusual... I'm not use to date like that at all. 

I hope everyone is doing well.  I will get back into the groove of this here soon.  As long as school doesn't decide to kill me.
